Lobster Tails in the Pressure Cooker

Ingredients
  

  • 2-6 lobster tails thawed (about ½ lb. each)
  • 1 cup water
  • 1 stick butter melted

Instructions
 

  • Place lobster tails on trivet in pot.
  • Pour in one cup of water
  • Set pot to Pressure Cook on Low Pressure for 2 min, and 2 min NPR. Then turn the valve and manually release the rest of the pressure. Open pot and serve with melted butter.
  • Use a large chef's knife to split the tail in half after they are cooked. It's easy, just align your knife down the length of the tail and press down with the knife. The shell splits right in half and you'll be able to get the tail meat out very easily with a fork.

Notes

Tips: This timing works for whole lobster as well as long as their tails  are about the same size (so whole lobsters that are around 1 lb or slightly over). You can fit two whole lobsters in a 6 Qt pot easily.
You can also frozen lobster tails, I recommend adding 2 min to the NPR.
