Instant Pot Quick Curry Chicken by Grandma Behrendt
The recipe was born out of desperation. I didn't have any canned tomatoes, or fresh cilantro when it occurred to me that everything I needed was in a jar of salsa: Tomatoes, Onions, Peppers, and Cilantro! So I gave it a try and I am so glad I did. It was amazing!
Equipment
Ingredients
- 2 lb chicken, sliced can be partially frozen
- 1 tsp seasoning like PCMagic
- 3 Tbsp ground curry
- 2 cups chunky salsa or pico de gallo
- 15 oz can of coconut cream full fat
Instructions
- Layer ingredients into pot. Place chicken in pot first. Sprinkle with seasoning, then top with curry powder. Pour salsa over chicken. Then add the liquid from the bottom of the can and leave the solid part, for now.
- Cook for 6 min HP and a 10 min NPR. Open pot and stir chicken add the coconut milk solid. Serve over rice and with naan bread if desired.
- You could also do this with pork for the same cooking time. Pork loin or Pork tenderloin would be nice for that.
