Keto Breakfast Bagels

Ingredients
Dry Ingredients:
- 1¾ cup almond flour
- 1 Tbsp baking powder
Cheese Mixture:
- 12 oz mozzarella cheese shredded (12 oz by weight or 3 cups by volume)
- 2 oz cream cheese
- 2 lg eggs for dough, plus 1 egg white for brushing
Toppings:
- 1-2 Tbsp sesame seeds, poppy seeds, or everything bagel seasoning optional
Instructions
- Set oven to 400° and line baking sheet with parchment paper then set aside.
- Combine the almond flour and baking powder in a small bowl and set aside. In a glass bowl, add mozzarella and cream cheese. Microwave them together in 30-second spurts and stir each time. Keep going until mixture is mostly melted and smooth (about 1½ to 2 min total).
- Put the cheese mixture into a food processor, along with two eggs and dry ingredients, and process until smooth.
- Lightly flour kitchen counter with some almond flour. Roll the dough onto it and knead a couple of times until you form a nice dough ball. Press out into a circle and divide it into eight equal portions. About 2.7 oz each if you like to measure exactly.
- Roll out each piece of dough into a short, rope shape. Connect the ends to form a circle for your bagels. These bagels are going to rise quite a bit. So, if you like a bagel with a large hole in the center then roll longer rope shapes. I like a smaller center hole so I can use them for bagel sandwiches.
- Place the bagels onto the lined baking sheet. Whisk the egg white with a splash of water in a small bowl then brush it over the tops of each bagel. Sprinkle toppings of your choice. Bake the bagels for 12-15 minutes, until golden brown.
- Remove the bagels from the oven and let them cool completely, before slicing and serving. As the bagels cool they will flatten quite a bit. Don't worry though, these are still great toasted and I could still cut them in half easily.
- To make a breakfast sandwich I just fried up an egg and a slice of bacon. Then sliced my bagel, added some baby spinach, the egg and bacon. Perfect and surprisingly filling too. I didn't top the sandwich with cheese since there is already so much in dough. It didn't really need any. My daughter said the bagel tasted like a cheesy biscuit.
