How To Set Up Your Kettle Pizza Fire

Ingredients
- 1 chimney black charcoal
- 2-4 chunks hard wood oak or something of that type
- 1 Kettle Pizza Set
Instructions
- First, start your charcoal and get that all hot and ready to go.
- When coals are ready, spread out on the back side of grill. Place a few chunks of hardwood on the coals to get them burning as well. You don't want the fire underneath the stone, just on the back side.
- Once your wood and charcoal are going well, you can set up the Kettle Pizza. Place the grill on first. Make sure it sits on the lower bolts so that you can lift pizza in and out easily.
- Once the grill is set up, go ahead and let everything heat up and get your stone in there to heat up as well.
- You should be able to slide your pizza in easily and retrieve it with a pizza peel.
- Pizzas will cook fast at 700+ degrees, so you need a pizza chef to watch them and turn them. The back of the oven is hotter than the front, so a few turns is necessary.
- Roll out your dough and get your pizza station set up beforehand.
- If you are doing a lot of pizzas, a pizza stand comes in handy so you still have counter space for topping and rolling dough.
- Just stack pizzas in your cue and get ready to cook. We can usually do 6-7 pizzas in one firing.
