Marvelous Shrimp Toast Squares

Ingredients
  

  • 7 slices Texas toast-style bread crusts removed
  • 4 Tbsp butter softened and spreadable

Filling:

  • 8 oz cream cheese softened
  • 2 egg yolks
  • 1 tsp lemon juice
  • 12 oz shrimp (90-120 size, cooked, deveined, tail-off) rough chopped (about 1¾ cup)
  • 2 oz jar of diced pimento
  • ¼ cup scallions finely sliced
  • seasoned salt to taste just a couple of shakes should be fine

Instructions
 

  • Preheat oven to 375F. Line a baking sheet with foil.
  • Thaw out your shrimp, drain excess liquid and set aside.
  • Mash cream cheese, yolks, and lemon juice together in a bowl with a fork until smooth. Stir in chopped shrimp, pimento, scallions, and seasoned salt.
  • Remove crust from bread. Brush 1 side of each bread slice with butter, then cut into four squares. Place quartered bread on foil lined baking sheet.
  • Mound about 1 tablespoon of shrimp mixture (60 scoop) on each piece of bread, then bake on baking sheet until puffed and golden, about 15-20 min.
  • These look beautiful with some fresh greens like chives or chopped parsley sprinkled over the top when serving.

I absolutely love these. I have also made these with scallops because I love scallops so much. Both ways are truly awesome.
