Marvelous Shrimp Toast Squares
Ingredients
- 7 slices Texas toast-style bread crusts removed
- 4 Tbsp butter softened and spreadable
Filling:
- 8 oz cream cheese softened
- 2 egg yolks
- 1 tsp lemon juice
- 12 oz shrimp (90-120 size, cooked, deveined, tail-off) rough chopped (about 1¾ cup)
- 2 oz jar of diced pimento
- ¼ cup scallions finely sliced
- seasoned salt to taste just a couple of shakes should be fine
Instructions
- Preheat oven to 375F. Line a baking sheet with foil.
- Thaw out your shrimp, drain excess liquid and set aside.
- Mash cream cheese, yolks, and lemon juice together in a bowl with a fork until smooth. Stir in chopped shrimp, pimento, scallions, and seasoned salt.
- Remove crust from bread. Brush 1 side of each bread slice with butter, then cut into four squares. Place quartered bread on foil lined baking sheet.
- Mound about 1 tablespoon of shrimp mixture (60 scoop) on each piece of bread, then bake on baking sheet until puffed and golden, about 15-20 min.
- These look beautiful with some fresh greens like chives or chopped parsley sprinkled over the top when serving.

I absolutely love these. I have also made these with scallops because I love scallops so much. Both ways are truly awesome.
