1-Minute Chicken Breast - Pressure Cooker
It's really easy to overcook your food in a pressure cooker. Sometimes people just can't believe it will be fully cooked in such a short time. So they add 5 min or 10 min or even 20 min to a recipe's cooking time. It's easy to forget that while your pot is coming to pressure, it is already getting HOT inside the pot and your food begins to cook. So your food begins to cook as soon as you turn on your pot. Your food is also still cooking while you NPR, another 10 min. So, always keep that in mind before you start adding time to any recipe.
Equipment
Ingredients
- 2-4 chicken breasts (raw and thawed) 6-8oz. each
- 1 cup marinade or broth I used a bottle of Garlic & Herb marinade
Instructions
- Put chicken breasts in the bottom of the pot in a single layer.
- Pour marinade over meat. If you don't have a marinade, then you can use broth and any type of seasoning you want.
- Set your pot to Pressure Cook for 1 minute. If your chicken breasts are 8-12 oz. Add another minute to the cooking time. If your chicken breasts are 1 lb, add 2 additional minutes to the cooking time or cut them in half lengthwise. (Like you are going to butterfly them but you will cut all the way through.) Add 5 minutes if your chicken breasts are frozen.
- Let chicken NPR for 10 minutes. If your meat is very thick, you can even let them sit as long as 20 min. Check the internal temperature when you open your pot. Your chicken should be 157-160 degrees.
- If you want to broil it or brown it afterward go for the lower temp so you don't overcook while broiling
