Marilyn's Fluffy Meatloaf Recipe- Instant Pot Converted

Ingredients
  

Meat Mixture

  • 2 pounds Ground Beef
  • 1 pound Ground Pork or Ground Turkey
  • 3 slices Soft White Bread
  • ½ cup Milk
  • 2 large Eggs slightly beaten
  • 2 tsp Sea Salt seasoned salt
  • 1 cup Minced Onion or grated is fine too
  • 1 tsp Garlic Powder

Meatloaf Glaze

  • 1 cup Ketchup
  • 1 Tbsp Brown Sugar
  • 1 Tbsp Worcestershire Sauce

Instructions
 

  • Stack bread slices on a plate and pour milk over the top and let soak while you gather the rest of your ingredients. Place the rest of the meatloaf ingredients in a bowl.
  • Tear up your soaked bread a bit and make sure it is well saturated. Now you can add the soaked bread to the meat mixture. Your bread should have soaked up most of the milk. Get your hands in there and mix all of the meatloaf ingredients well. Try not to over mix it, you want to keep it fluffy but want all your ingredients evenly distributed.
  • Form meat mixture into 2 loaves and place into aluminum foil pans or make your own pans out of kitchen foil.
  • Add 1 cups of water to the bottom of the pot. Then add the trivet that came with your pot.
  • Fit both of your meat loaves into your pot. One can be on the bottom trivet that came with your pot, and one on a tall trivet, if you have one. You can try to place them side by side if you don't have a tall trivet, but they may be a bit crowded for cooking.
  • Close lid on your pressure cooker and set valve to sealing if your pot requires that. Cook at High Pressure for 32 minutes, with 10 min NPR.
  • While your meatloaf is cooking mix together your Meatloaf Topping and set aside.
  • When meatloaf is done, check the internal temp. It should be 165 degrees in the center. If it is more than that, it is okay. Meatloaf is very forgiving. Then carefully remove meatloaves from pot and spread on with your Meatloaf Glaze.
  • Then Broil for a few minutes to melt and brown the glaze (optional).
  • Set your meatloaves aside to cool a bit before slicing.

Notes

If you cook your meatloaves side by side on the same trivet and they seem too crowded, you may want to add an additional 5 minutes to the cook time.

This recipe makes two meatloaves that are about 1.5 lbs each. We usually have one for dinner and save the other one to make meatloaf sandwiches the next day. You don’t have to make two, you can just make one for your family. The cooking time will remain the same, just halve the ingredients.
