Sour Cream and Cottage Cheese Pasta - Instant Pot

This updated version of a classic favorite now done in the pressure cooker is so quick and easy! Everyone loves it and we usually have the ingredients on hand. Swap out the pasta shape to suit your own taste. This is also a great camping recipe.

Ingredients
  

  • 1 lb pasta bowtie, campanelle, penne
  • 4 cups chicken or vegetable broth
  • 1 tsp sea salt (optional)
  • ¼ cup butter
  • 1 sm onion diced
  • cups cottage cheese
  • ½ cup sour cream
  • ground black pepper to taste
  • ½ cup green onions finely sliced (optional ingredient for garnish)

Instructions
 

  • Set your pot to Saute (Normal setting) and make sure the steel pot is in place. When your pot says Hot, you can add your butter.
  • As the butter melts over med heat, add your onion and begin to soften. Be careful not to let your butter scorch. Keep stirring for 1 min.
  • Add your broth and deglaze the pan if necessary. If you are going vegetarian you can either use water or vegetable broth instead of chicken broth. Press Cancel to end the Saute mode.
  • Stir the pot and add your pasta making sure it is spread out evenly and mostly under the liquid.
  • Sprinkle 1 tsp of salt on top of the pasta and DO NOT stir. Close the lid and set your pot to Sealing if necessary for your model.
  • Set the pot to cook for 6 minutes (half the time on the box).
  • When the timer has counted down and the cooking cycle has been completed, release pressure by doing a controlled release a few spurts at a time.
  • When the pin drops and all the pressure has been released, carefully open your pot.
  • Stir in cottage cheese and sour cream while the pasta is still hot. Close the lid and let cheese dissolve/melt into the pasta mixture. About 3-5 min.
  • Open the lid and serve hot pasta immediately with black pepper and green onions for garnish.
  • Some people stir the black pepper into the pasta. I have found not everyone loves this, especially if you have kids. I just serve it on the side.
