Fancy Homemade Cheeseburger Macaroni - Instant Pot

Havarti is a semi-soft cheese that makes a really flavorful addition to this upscale cheeseburger macaroni. Way better than the boxed dinners. Experiment with your cheese if you like and make it your own!

Ingredients
  

  • 1 lb lean ground beef
  • 1 Tbsp avocado oil
  • 1 tsp seasoned salt or PC Magic
  • 8 oz fresh mushrooms cleaned and sliced
  • 1 lb pasta medium shells or campanelle are terrific
  • cup water
  • 3 cups beef broth
  • 1 cup heavy cream (additional for a saucier sauce)
  • 8 oz Havarti, grated and weighed (about 2-3 cups, if you can't weigh it)

Instructions
 

  • Plug in your pot and make sure the inner pot is in place. Turn your pot on Saute and let heat up until it says HOT. When your pot is ready, add oil, then add your meat. While you are sauteing the meat add seasoning.
  • After you season the meat continue to cook and break it up until it's almost done. You don't have to wait until all of the pink is gone. It will still cook along with the pasta.
  • Add mushrooms to the pot and let those begin to cook down for 1-2 minutes.
  • Deglaze your pot with 1½ cups of water. To deglaze, simply pour the water into the pot and scrape the bottom to make sure any browned bits aren't stuck to the bottom.
  • Next, add your choice of pasta and the broth. Close the lid and cook for half the time on the box usually about 4-5 minutes HP and QR. While you are releasing pressure, if your pot begins to spew or foam comes out of the valve, then slow down and let the pressure out in smaller spurts.
  • After all the pressure is released add your cream and Havarti cheese. Close the lid again and let your pot sit for 3 minutes.
  • When 3 minutes have lapsed, you can open up your pot, stir and serve. You may have to release pressure again. That's normal if that happens, it's just a little steam build-up. Open the pot and stir. Your cheese will be evenly melted and blended right into the cream and make a wonderful sauce.

Notes

This recipe just has a light coating of sauce for flavor so it's not dripping with sauce. If you like more sauce add another hcup of cream and another cup of grated Havarti cheese.
