Marilyn's African Chop Suey or Hamburger Rice Hotdish in the Instant Pot

Ingredients
  

  • lbs Ground Beef Lean
  • tsp Seasoned Salt PC Magic works even better
  • 1 cup onion chopped
  • 2 cups medium grain rice sushi rice is perfect (or your favorite white rice)
  • 3 cups cold water
  • 4 Tbsp soy sauce
  • 12 oz can Cream of Mushroom Soup
  • 2 cups celery sliced
  • 4 oz canned mushrooms optional
  • Chow mein noodles for serving

Instructions
 

  • Press Saute and wait for your pot to heat up and say HOT. Once your pot says HOT, add your meat and brown it in the pot. Season your meat with seasoned salt, or salt and pepper if you don't have any seasoned salt.
  • When meat is halfway browned and seasoned, add your chopped onion and cook for about 2 minutes. Stirring and scraping the bottom of the pot as needed.
  • Press Cancel now to turn off Saute. From this point on you will layer your ingredients so DO NOT STIR anymore.
  • Add your cold water and make sure you deglaze the bottom of the pot. Next add your unrinsed rice and spread evenly over the top and season with soy sauce.
  • Open your can of Cream of Mushroom soup and scoop out contents and let it sit right on top of everything. DO NOT STIR INGREDIENTS.
  • Now you can add your can of mushrooms and celery. Again, DO NOT STIR these ingredients. Leave them alone.
  • Close your pot and set to Sealing if required. Press Manual or Pressure Cook and set for 6 minutes. Let your pot NPR for 10 minutes before opening. Your food will continue to cook during the natural pressure release.
  • Open pot and stir layered ingredients. Serve with chow mein noodles if desired.

Notes

Long grain or parboiled rice will work here too, it doesn't really matter that much, but you may need to change your water to rice ratio to 1:1 depending on how soft you prefer your rice.
We love to use medium-grain sushi rice, it works perfectly in the instant pot. Our favorite brands to use are Kokoho Rose or Calrose rice which is found in the International or Asian aisle of the grocery store. The measurement I use is regular cups. Don't use the rice cup,  that isn't what I used. The Instant Pot version of this recipe has been a big hit and everyone loves it. Great homey comfort food. Other options for this dish.
Peas are a great addition. You can add another cup of celery if you want more veggies. Also, you can serve with soy sauce and crispy chow mein noodles. My kids love it that way.

This was my MIL’s recipe and I never asked her why it’s called African Chop Suey, but I do recall she got it from her church cookbook. So your guess is as good as mine. I would probably have called this Chow Mein Hotdish.

  1. ⭐️⭐️⭐️⭐️⭐️Made this for dinner tonight, with just a few changes. I used my Grandmother’s recipe for which she titled, African Chow Mien. I cut the rice and water by one half and added diced water chestnuts.. Thanks for a wonderful recipe!
