Instant Pot Homemade Rice-a-Roni

Ingredients
- 1 cup long grain rice
- 1/4 cup orzo
- 2 Tbsp butter
- 2 cups chicken broth
- 2 Tbsp scallions thinly sliced
Spice Blend:
- 1 tsp salt
- ½ tsp dried parsley (or ½ Tbsp freshly chopped)
- ⅛ tsp paprika
- ⅛ tsp turmeric
- ⅛ tsp granulated garlic
- ⅛ tsp granulated onion
- ⅛ tsp ground black pepper
Instructions
- Turn Saute mode on to the More or High setting. Wait until pot says Hot and add your rice first. Cook that for 2 minutes.
- Now add your orzo and cook until browned which should be 2-3 min.
- Add the Spice Blend and stir until fragrant. Then press Cancel
- Pour broth into pot and scrape the bottom a bit to make sure nothing was sticking. Put lid on pot and set to Sealing until you have a self-sealing lid. Set pot to Pressure Cook for 6 min and do a 10 min NPR.
- When you open the pot fluff the rice and add your scallions.
- Serve hot. Enjoy!
