Ingredients
  

  • 3 lbs chuck roast
  • 2 cups onion diced
  • 4 potatoes diced
  • 4 carrots sliced
  • 1 Tbsp garlic minced
  • 8 cups beef broth
  • 14 oz can of diced tomatoes
  • 2 Tbsp oil for browning meat
  • 3 Tbsp paprika
  • 2 tsp caraway seed
  • 1 tsp dried marjoram
  • 1 tsp lemon peel
  • 2 tsp salt
  • ½ tsp pepper

Instructions
 

  • Cut and chop your veggies and set aside. Cut your meat into cubes and set aside. Measure your seasonings into a small dish.
  • Heat up your Dutch oven until hot. Add oil and begin to sear your meat on all sides. Sear in batches. When done, remove from pot and set aside.
  • Add onions and saute adding more oil if necessary. Cook unions until translucent and add garlic and cook another minute stirring frequently. Add your seasonings and stir to distribute.
  • Add meat back to pan. Add broth and diced tomatoes. Bring pot contents to a simmer and cook for 45 min.
  • When meat is tender, then add potatoes and carrots and cook for another 20 min.
