Hungarian Goulash Soup
Equipment
- Dutch oven
Ingredients
- 3 lbs chuck roast
- 2 cups onion diced
- 4 potatoes diced
- 4 carrots sliced
- 1 Tbsp garlic minced
- 8 cups beef broth
- 14 oz can of diced tomatoes
- 2 Tbsp oil for browning meat
- 3 Tbsp paprika
- 2 tsp caraway seed
- 1 tsp dried marjoram
- 1 tsp lemon peel
- 2 tsp salt
- ½ tsp pepper
Instructions
- Cut and chop your veggies and set aside. Cut your meat into cubes and set aside. Measure your seasonings into a small dish.
- Heat up your Dutch oven until hot. Add oil and begin to sear your meat on all sides. Sear in batches. When done, remove from pot and set aside.
- Add onions and saute adding more oil if necessary. Cook unions until translucent and add garlic and cook another minute stirring frequently. Add your seasonings and stir to distribute.
- Add meat back to pan. Add broth and diced tomatoes. Bring pot contents to a simmer and cook for 45 min.
- When meat is tender, then add potatoes and carrots and cook for another 20 min.
