Instant Pot 5-Minute Swedish Meatball Soup

I love recipes that are so easy they practically cook themselves! If you want to make your own meatballs from scratch, go ahead and do that. But, for the days you need something fast and you don't feel like cooking, frozen Swedish meatballs work just fine.

Ingredients
  

  • 24 oz bag of frozen Swedish style meatballs
  • lb red potatoes cubed
  • 10 oz frozen peas
  • 3 cups beef stock
  • 1 tbsp butter
  • 1 cup onion finely chopped
  • tsp seasoned salt
  • ½ tsp white pepper
  • ¼ tsp granulated garlic
  • ¼ tsp nutmeg
  • 2 cups half-and-half
  • 3 Tbsp corn starch for the slurry
  • 3 Tbsp water for the slurry

Garnish

  • 1 cup sour cream for dolloping each bowl

Instructions
 

  • Start by finely chopping your onion, then turn your pot onto Saute (Normal). Add butter and let it melt. When your butter is melted, add the onion and begin to saute. Add your seasonings: garlic, nutmeg, salt, and pepper. Press Cancel.
  • Deglaze your pot with broth.
  • Add your frozen meatballs.
  • Cube up your potatoes into bite sized pieces and add those to the pot.
  • Pour peas right on top. Don't stir them in, just leave them on top.
  • Set your pot to Pressure Cook for 5 minutes and QR. When your soup is done cooking open pot and stir. Press Cancel and turn your pot on to Saute.
  • Add your half and half and your cornstarch slurry. Heat soup until thickens a bit. If you like a little bit thicker soup, add an additional tablespoon of cornstarch to your slurry.
  • Dollop each bowl with sour cream if desired.

Notes

TIP: If you can't find frozen Swedish meatballs or simply wish to make your own, go right ahead and do that. If you have a favorite recipe, go ahead and use that. If they are the same small size that Swedish meatballs are, you shouldn't need to change the cooking time as long as you brown them a bit first. Browning them will get the cooking process started and also keep them firmer and prevent them from sticking together in the pressure cooker. I roll them out and put them on a rimmed baking sheet and cook 10 min at 400°. Or you can use your air fryer and cook them at 375° for 8-10 min. 
Basic Swedish Meatball Recipe (mix together)
  • 2 slices white bread, crusts removed and diced into small cubes
  • 1 small onion, grated
  • 10 oz ground beef
  • 10 oz ground pork
  • 1 egg, beaten
  • ¼ tsp ground nutmeg
  • 1 tsp salt
  • ¼ tsp black pepper
