Huevos Rancheros Instant Pot
Equipment
- Stacker pans
Ingredients
- 4-6 corn tortillas
- 1 cup sausage crumbles precooked
- 1 cup black beans or pinto beans optional canned
- 1½ cups colby jack cheese shredded or whatever you like
- 2 cups salsa or pico de gallo
- 4 large eggs
Garnishes:
- cilantro
- avocado
- jalapenos
- crema or sour cream
Instructions
- Turn on oven to 375 and place tortillas on a baking sheet. Portion out black beans and sausage on top of tortillas and top each of them with cheese. Place in oven. These will take about 10 minutes. By that time the eggs should be done.
- Pour salsa into a 7 in pan for pot in pot cooking. I use one of my stacker pans.
- Make a slight 'hole' in the salsa to place each egg. Put pan on trivet and poach the eggs in salsa for 1 min* and QR. You may need to experiment a bit with timing. If your eggs are too done, you should cover the pan with foil in the future.
- Eggs will continue to cook in the salsa, even on Keep Warm so try to remove them right away. Scoop eggs out with a slotted spoon.
- Assemble tortillas and eggs. We often stack our tortillas and then add the egg on top of two tortillas.
- Garnish as desired. I added jalapenos and cilantro.
