Famous Tik Tok Tomato Feta Pasta Recipe for the Instant Pot

There are many TikTok videos going around by several people that show this recipe roasted in the oven. I decided to convert it to the Instant Pot for the pressure cooker crowd. Go ahead and give it a try.

Ingredients
  

  • 12 oz box of pasta that cooks for 10-12 min on the box
  • 1 pint cherry or grape tomatoes cut in half (or canned diced tomatoes 14 oz)
  • 8 oz chunk feta or goat's milk cheese left whole
  • 2 Tbsp Olive Oil
  • ½ Tbsp dried basil or 2 oz fresh if you can find it
  • 1 tsp salt divided in half
  • ¼ tsp garlic powder or granulated garlic
  • fresh ground pepper to taste
  • parmesan cheese optional

Instructions
 

  • Prepare your stacker pan (just one) with your cherry tomatoes and feta.
  • Then add your olive oil, garlic, seasonings and only ½ teaspoon of salt.
  • Cover with light foil. Heavy duty foil will block too much heat.
  • Pour dry pasta into the bottom of the pot. Add water and the other ½ teaspoon of salt.
  • Then add your tall trivet.
  • Place tomato mixture covered in foil on top of the trivet and set your pot to cook for 6 minutes. When cooking is done, do a controlled release. (Letting the steam out in spurts until you can safely open the valve without foam or spewing)
  • Carefully take out your pot in pot first and set aside. Remove the trivet and stir the pasta. lightly mash with a fork or potato masher. Add your drained pasta.
  • Uncover your pot in pot dish and use a fork to slightly mash the tomatoes and mix together with the softened feta.
  • Add mixture to your pasta and then mix together.
  • Optional: Serve and drizzle with more olive oil, add fresh basil and parmesan cheese.

Notes

Tips: In my first attempt to make this, the tomatoes were soft but I would have liked them a bit softer. I think you can achieve this by cutting the small tomatoes in half and then proceeding with the recipe.
