How to Use the Slow Cook Mode – Instant Pot

Don’t be afraid to use the slow cook mode on your IP. Just remember that the temp setting is a bit different than on a crockpot or other type of slow cooker. I have read many times that others don’t think the slow cook mode works in their Instant Pot and advise people NOT to use it. I fell for that for a long time too until I finally tried it.

I am sure that most people are trying to cook their food on Less which is the warm setting. You will never cook your food on Warm.

Temperatures when using the Slow Cook mode in the IP:

  • Less=Warm 180-190°F (you cannot cook on warm)
  • Normal=Low 190-200°F
  • More=High 200-210°F

I cooked this beef roast on the Normal setting which is Low (in a crockpot) and it took 10 hours to cook it properly.

I looked for comparisons on temperature, the CrockPot temperatures online stated this:

Crockpots may vary but generally, the LOW setting is about 200°F and the HIGH setting is about 300°F. One other source said that HIGH was 230°F

You can use a slow cooker liner in your Instant Pot when using Slow Cook Mode only. NEVER USE A PLASTIC LINER WHEN PRESSURE COOKING. No, it won’t melt under pressure. That is NOT the reason. The pressure cooker temp is still only 250°F and these heat resistant nylon bags are the same material as the oven bags which are fine for up to 400°F. It’s just that the bag can interfere with the seal and also could/might get sucked up and cover the valve when pressure is released.

My second experiment was with a chicken and potatoes. I used SLOW COOK MODE on the IP Max. It only took 3 hours on the slow cook mode for my IP to fully cook my chicken and potatoes. The chicken was so tender the wing fell off. I could feel the hip joints were loose and on the verge of falling off. Overall excellent result from the slow cook mode. I didn’t feel that the stainless steel pot did any disservice to the cooking at all.

Now I know! Crockpot going in the garbage today!👍😆
