You can certainly double or trible this recipe. Make as much rice as you need to. Be aware though, that when you cook rice, beans, pasta, or other starchy food in your pot, you need to remember that it should never be more that half full. Use that as a guideline when determining how much food you can fit into your pot.

Equipment

Ingredients

  • 2 cups rice - high quality jasmine (measured using the rice cup)
  • 2 cups water (measured using the rice cup)
  • 1 Tbsp butter optional
  • 1 tsp fine sea salt optional

Instructions

  • Using the rice cup that comes with your pot, measure two cups of rice.
  • Rinse rice under warm water until water runs clear. Drain well of excess water.
  • Again, using your rice cup, measure two cups of water and add to your pot. The white rice to water ratio in the pressure cooker is 1:1 for rinsed white rice.** When you rinse rice and drain it, there will still be some water left on and in between the rice grains.
  • I like to add a little butter and salt to my rice. You can can skip this if you want to. I add 1 Tbsp butter and 1 tsp of salt for every 2 rice cups.
  • Press the Rice button and then Start (if your pot requires that). Your pot will say Auto since the Rice button is an Automated feature. Also, don't forget to set the valve to Sealing if your model requires that as well. Depends on which model you have. You may also notice your pot is on Low pressure.
  • Once your pot comes to pressure, the front screen will show the automatic cook time determined by your pot. The pot has a sensor that figures out the correct time.
  • When the cooking time is complete, allow for a 10 min NPR.
  • Open your pot and use the rice paddle to fluff and serve your rice. Using the rice paddle is great for rice. It allows you to stir or serve rice without crushing the grains.

Notes

Tips: Higher altitudes may require 15-20% more liquid and a slightly higher cooking time as well. There are several Instant Pot models that automatically adjust your cooking time to higher altitudes. If you have a pot with that feature, be sure to program your altitude to take advantage of that feature.
Rice is very inexpensive and varies widely in quality. Try to use a rice that is midrange to high quality. The better rice you use, the better your final outcome will be.
Of course, these are just some basics that will get you started. If you  prefer your rice firmer, use a bit less water. If you like your rice stickier, use more water. It's always nice to make those tweaks once you know how your pot works. Personal preference is all a part of cooking.
** If you don't have a Rice cup you can just make sure to measure your white rice by a 1:1 ratio of water to rice.
