Easy Instant Pot Jambalaya

Ingredients
  

  • 8 oz box Zatarain's Jambalaya Mix
  • 2 Tbsp cooking oil
  • 1 cup green pepper diced
  • 1 cup onion diced
  • 1 cup celery diced
  • 1 Tbsp garlic minced
  • 2 cups Beef Broth or any flavor you prefer
  • 14 oz diced tomatoes, canned
  • 4 Chicken legs or thighs
  • 12 oz sausage or kielbasa flavor of your choice, I used Cajun, cut into 2" chunks
  • 16 oz shrimp raw, peeled and deveined

Instructions
 

  • Press Saute and start heating up your pot. When the pot says HOT then you can add some oil and saute your onions, celery, and green peppers.
  • After 2-3 minutes of sauteing add your garlic and saute for 1 minute more. Deglaze your pot with some of your beef broth. Not all of it, just about 1/2 cup. (leave shrimp out for now)
  • Layer in your ingredients by first adding the chicken pieces and your cut up sausage.
  • Pour box of Zatarain's over the top and add the rest of your beef broth.
  • On top of that add your can of diced tomatoes.
  • Press cancel to turn off the Saute mode. Now press Pressure Cook or Manual and set the pot for 10 minutes. Close pot and set to sealing. When pot is done cooking let NPR for 10 min, the QR and release the rest of the pressure.
  • Open the pot and add your raw shrimp. Give the ingredients a quick stir and close pot again for 5 min. Your shrimp will turn pink and white and cook in the heat of the pot.
  • I served this with Cheddar Bay Biscuits and sliced jalapenos for extra heat.

Notes

If you use a 12 oz  box you need to add 3 cups of broth.
