Tequillaberrys Famous Salad

This is such a great salad to take to potlucks for family gatherings. Everyone loves it and it's a huge hit. Several restaurants around town made this salad famous, at least locally. The recipe makes quite a bit, so make sure you have company.

Ingredients
  

  • 1 head iceberg lettuce chopped into 1 inch pieces
  • 1 head cauliflower chopped finely, pea size
  • 1 lb bacon
  • 1 cup mayonnaise Hellman's was the local favorite here
  • Tbsp white vinegar
  • ¼ cup sugar
  • 1 cup grated parmesan cheese

Instructions
 

For the Salad Mixture:

  • Fry bacon until crispy, drain on paper towels and set aside to cool.
  • Core, clean, and drain your lettuce. Place in fridge for at least an hour to crisp up. I usually place in a mixing bowl with paper towels for draining the water.
  • When your lettuce is firmed up and crisp, remove from fridge and chop into 1" pieces and ad into a large mixing bowl. Then chop your cauliflower into a 'pea sized' pieces and pour that on top of your lettuce.
  • Chop bacon into bite sized pieces and add to the top of your salad mixture.

For the Dressing:

  • In a small bowl combine mayonnaise, vinegar, sugar, and parmesan. Allow dressing to sit for 30 min or so before tossing with salad. Don't mix your salad together until ready to serve as this salad will wilt rather quickly.

Notes

Notes: There are a few versions of this recipe. Some former employees all claim to know the secret to the dressing and say: 1 cup mayo, 1 cup buttermilk, 1 cup sugar. I have seen another person say it's not buttermilk, but milk and the ratio is 25:5:1 (mayo/sugar/milk). While there is still some confusion on this, there is no doubt that each version is still fantastic and very close to the original. Go ahead and experiment with these versions, I know I will. The buttermilk intrigues me. The 1 cup of sugar doesn't though. We may never know the true story.

This restaurant was terrific back in the 80’s and if your date took you there, you were delighted! They served an incredible all-you-can-eat prime rib dinner and this salad was served and tossed table side. So impressive!
